Harvest Feast prep at Albany High

Our Albany High students in Culinary II and Culinary III were hard at work on Tuesday roasting ten turkeys for Arbor Hill Elementary School's upcoming Harvest Feast, which will take place on Thursday evening from 5 to 7 p.m.

This event is for Arbor Hill elementary students and their loved ones and will include music, family-friendly games, food, refreshments and more!

Chef Lisa Valentine walked her students through the process of perfectly prepping, roasting and carving a traditionally roasted turkey. Students learned about safely handling raw meat, mixing and preparing seasonings and utilizing the right knives and techniques to carve and separate out white and dark meat. 

Additionally, they practiced preparing a velouté, which is one of the "mother sauces" of French cuisine made from a roux and a light stock.

The delicious meat and velouté will be utilized to create turkey sliders, a fun twist on a traditional favorite!

We are full of gratitude for our talented students who have utilized their skills and talents to help Arbor Hill Elementary families enjoy a special event together as they look forward to the Thanksgiving holiday next week!
